Another incredible bottle! Like all Peter Michael chardonnays, this wine opens up to reveal a complex taste if not kept chilled after opening, but allowed to warm up to room temperature as it is drunk. Tastes of vanilla, clarified butter, rounded citrus; lighter and more subtle than most other Peter Michael chardonnays.

Decanted for an hour, then re-bottled (after rinsing bottle with distilled water) and poured at restaurant two hours after decanting. Nose of classic Pauillac with dark fruit, earth and barnyard; drank over next two hours (along with a Peter Michael 2008 Ma Belle Fille) with tastes of dark fruit, plum, earthy/mud and what can only be described as that unique Paulliac taste. Much better than last bottle perhaps due to decanting two hours in advance.
