Had this sparkling at the vineyard today. Strawberries and cream on the palate. Can’t get more English/Kentish than this. Wonderful artisanal bubbles from Nick and Kirsty. One of the best English sparklings.

Day one Still tight after pnp. Nose showing more than palate. Well made but not showing all. Fruit day
Day two More lively with a tingling acidity and fruity characters showing. Root day
Day three Tertiary Barbaresco notes like nuts and oxidative balsamic/tar coming through. Drying at the end. Root day
Day four No fruit but still some acidity and not drying. Actually prefer this today over day three so maybe there is more aging potential than I thought yesterday. Root day.
This bottle was best on day two so could keep it a couple more years or give it at least an hour of air. But on the showing on day four I might keep a bottle or two for ten+ years.
