Not the soft ones like brie but the harder ones like a good Gouda or a harder French cheese. In search of the holy grail of wine and food pairings, I obtained a sommelier diploma. I wanted to discover the ultimate combinations. As I learned more, I became more convinced that 'the ideal combination' does not exist. I don't believe that 1 + 1 together can become 3 in an ideal combination. Wine and dishes should not get in each other's way, so if 1 + 1 is no less than 2, I am already very happy. I prefer to drink these dignified oldies 'by the fire'. Or with cheese as a dessert. And at most with a subtle meat dish without heavy sauces.
