Dream wine: 1961 Cheval Blanc
I am a waiter at two restaurants in San Diego, both are focused on wine. Through my jobs, I taste a lot of wine and a wide array of wines from all over the world. Mostly, what I see people drinking most often is California Cabernet and I think that's a shame because there are so many wonderful wines. My pallet tends toward old world wines that tend to be more food friendly, but i can certainly appretiate a well made new world wine. Above all, I really enjoy exploring and learning about wine and food.

I thought this was dynamite barolo. Perfectly aged and everything was in balance. Drank with porcini crusted ribeye (Mario batali's recipe), it was a perfect pairing. None of the dried out, thin character that other tasters have posted about. This was awesome nebbiolo.

This was an awesome bottle of cabernet franc. Thought maybe this would be over the hill, but it was aromatic and plenty of fruit left. Very good indeed. For $20 i am going back for a few more.
