4/7/2015 3:35:00 PM - Hi Daniel, Thank you for your message. Palates change when you get more experience and learn to love other styles than you are used to. Eventually you learn to appreciate new tastes. And indeed; good acidity is so important! But “coming home” to old familiar styles will always be a feast ;-). You may know I don’t live in the very south of Europe, but whenever you come over to Europe, you can let me know. If there is an opportunity to meet and share a few bottles that is always nice. A request: I would prefer corresponding in comments on tasting notes instead of on my front page (message board). Cheers!

12/8/2013 7:23:00 PM - No wonder shochu is on the rise and sake on the drop in consumption. Luckily, I do not have this problem yet.

12/7/2013 11:38:00 PM - Hanami is a great thing to enjoy. Nihonshu gives me severe headaches, but nothing beats it when enjoying traditional Japanese food. Just let me know when you're on your plans are fixed and we can make some kind of plans. I'll definitely be here in Tokyo during the sakura season.
