  • 2004 Dom Pérignon Champagne

    The 2004 Dom Perignon Champagne has really begun to come into its own. When I last opened a bottle in December 2020, it wasn't quite there yet, but now, it's starting to show some signs of maturity. In the glass, it has a golden-yellow color. The bubbles are fine, though not as lively as before, which is to be expected. On the nose, you get hints of freshly baked bread, walnuts, a mix of orange and tangerine citrus, a hint of the sea, green apples, and perhaps pear. It's a delightful aroma that only improves if you let it breathe for a couple of hours. On the palate, the flavors mirror the scents, with signs of a bit more evolution than what you get on the nose. It's got a good amount of acidity (med+), making it refreshing, with a lasting finish (long finish). It's a great wine that's in a good spot right now, and I think it'll only get better with a few more years. I plan to check back on it in three years.

  • 2016 Liquid Farm Chardonnay La Hermana

    Upon revisiting the 2016 Liquid Farm La Hermana nearly three years after my initial tasting, the wine has revealed a remarkable transformation. Initially perceived as youthful and somewhat closed, even after several hours of airing, it has now matured into a beautifully balanced and expressive wine. The nose has developed significantly, where the primary aromas of apricot, pineapple, and yellow fruits have evolved into a more complex bouquet, with the emergence of secondary aromas such as paraffin and steel wool adding depth and intrigue. On the palate, the wine maintains a persistent medium plus acidity. It unfolds with flavors of yellow apples, yellow pears, and a distinct mineral undertone. This complexity is further enhanced by an improved balance where the salinity and fruit flavors intertwine seamlessly. Medium-plus length leaves a lasting impression. Today’s bottle confirms that the wine was indeed in a closed phase during the last tasting and is now drinking beautifully, with potential for further aging. This evolution is a testament to the inherent quality and aging capability of the Liquid Farm La Hermana. You can open this wine now for its current expression of balance and complexity, and for those with additional bottles, it would be worthwhile to continue aging, I think that it will only get better from here.

  • 1995 Château Ducru-Beaucaillou

    Opened the bottle and took out a glass. Let the wine breathe in the bottle for a few hours. Wine was still closed, so I decanted it. Still closed even after several hours. The cork was intact, perfect fill, and barely anything creeping up on the cork. Honestly, this cork looks brand new.

    Presented as incredibly closed upon opening. Even after two hours of air and a subsequent two-hour decant, it remained relatively closed but somewhat more approachable. However, not much came through during the first few hours of drinking. Two days later, upon revisiting, the wine exhibited a remarkable transformation. On the nose, it offered enticing aromas of blackberries, graphite, blackcurrants, plums, and a touch of mint. On the palate, it showcased a velvety texture, endless length, and persistent tannins. The nose and palate included blackcurrants, blackberries, dark plums, along with subtle notes of iron, blood, mint, tobacco, and leather. Overall, it evolved from initially closed to an incredible and complex wine, just wow! I don't think I would revisit this for another few years - I would say consider cellaring for another five years.
