Nuances of good quality sea saltiness on the finish and also the tart, slightly underripe white peach, fresh ginger root. A touch of slightly underripe white peach. The bubbles are not as fluffy and cloud-like like some other amazing champagnes I've had but on this one, it was still excellent, zesty and lovely.

Bracing, tight, tart and crisp. Grapefruit as if you're biting right into an actual fruit! So clean and true to the fruit. At first sip after opening, a touch of lime and sea salt.
Food pairing would be Mex cuisine with lots of the lime, clilantro, salsas, margaritas.. you get the idea. Also buttery rich seafood from Japan such as unctuous uni, raw scallops, and oysters that are so plump and briny. A beautiful, zesty and refreshing Champagne that will liven up your taste buds and food.

First fresh sip was an eyebrow raiser. It had beautiful, cloudy and zesty bubbles and a bright spark of stone fruit that tasted like you just it into a juicy, stone fruit...Even some Japanese plum (Umbeboshi)!
It's got bite, its crisp, bright and I do notice also a hint of toasted coconut (which I read in another review here) and actually, he's right! And I love that.
