Critic tasting note: "(2019) Residual sugar is 172g/l here. Just gorgeous on the nose, the depth of the bouquet from the bush-vine Muscat, the heavy florals, sumptuous exotic Sandalwood and and lychee and marmalade. Heavenly perfume. Botrytis is deliberately avoided if at all possible, as only late-harvest grapes are desired. The palate has great silky richness, thick texture and nectarine, such lovely freshness and acidity, again that lick of saltiness adding to that clarity." - 95/100, Tom Cannavan

- The drought prompted a shorter harvest, which resulted in faster ripening fruit yielding berries with concentrated flavours and well balanced acidity. With the renovated cellar, we could make use of dedicated tanks intended for perfect maceration and fermentation of the Muscat. Throughout the season we harvested in batches - from the riper berries that have great acidity to the raisins for sugar concentration. Each batch is kept separate and treated differently. These batches make up the perfect ratio between sugar, alcohol and acidity which allows the wine to stop fermentation naturally and without intervention.

Each of our vineyard blocks is managed individually to express its specific terroir, with all work done by hand to ensure the highest quality. Every step of the winemaking process is carefully monitored: we are able to track each and every action by date, quantity and batch number. To ensure that we have the best quality grapes coming into the cellar, we have a system whereby we can track and asses every lug box back to the picker responsible. Each picker has a number which is attached to the lug box; we then sort each and every bunch on a conveyor belt as it comes into the cellar. If the quality of a particular lug box is not up to scratch, we can relay the message back to the picker and address the situation. As a result, only grapes of the highest quality are used.

The 2015 vintage brought about both challenges and joys. It is the first vintage to be completed in our renovated cellar, with equipment dedicated for the making of Vin de Constance.Thisharvestmarkedthefirstyearof thelong3 year drought in the Cape, resulting in the earliest harvest of Muscat de Frontignan we have had since 1986. It was also the year of the terrible fires that raged through the Cape Peninsula.

Our Muscat de Frontignan grapes are harvested by hand in several batches, ranging from bunches of ripe berries with great acidity to individual raisins with intense sugar concentration (the latter used to make the ‘essencia’, the very heart of Vin de Constance). We harvest in the very early hours of the morning, ensuring that the grapes come in at the coolest natural temperature.

Maturation The wine was aged in a combination of 50 % newFrench oak, Hungarian oak and French Acacia. It was left for a period of 3 years in barrel on the gross lees before racking out and blending. It spent a further 6 months in tank before bottling.

After fermentation, the wine is aged on its gross lees in a combination of new French oak, Hungarian oak and French acacia for at least three years. No racking or movement of the wine occurs until the final blend has been reached following input from trusted wine judges including top sommeliers in South Africa and our French winemaking partners in Bordeaux and Sancerre.

Vibrant and tantalizing from the bright, golden appearance to the lingering, zesty finish. The nose is layered with aspects of citrus blossom, honeycomb and stone fruit which follow through onto the palate. Full bodied, the mouthfeel is rich and creamy with a refreshing acidity.
