At first taste, all seemed fine. Then this became oddly flat and vapid. It’s possible some fairly incendiary Thai food fleeced it. But then hard to explain why an Apoloonis Brut was able to overcome the heat and zest. Lots of sludge under the capsule and the cork seemed a touch loose, so maybe not a perfect seal.

Another Sunday service at Jade Court (Chicago, IL): #18-05. This is obviously a bottle after the HGS era, but it's still quite a convincing wine, though it comes off as a little more sweet and rounded than I would really have liked in a Spätlese. A high-toned herbal expression of riesling, with a slightly bitter phenolic character that seems quite Pfalz to me.

Bright green gold; nose shows honeyed fruit, herbs, age has given this the semblance of a dry wine if just going off of the nose; palate is still taut but opens up and deepens with air and temperature, lots of spicy apricot, quince paste, deep ripe nectarine, spicy botrytis notes and gobs of fructose that paired so well with Gu's Szechuan, the spice was extinguished nicely and the garlic and herbs came out so beautifully, liked didn't love the wine on its own but the pairing was as magical as Sancerre and Chevre.

reductive and toasty in a way somilar to aged champagne. fantastically concentrated, unctuous and balanced, with bright acidty keeping the sugars, which now seem more caramelized, in check.. perfect time to open this and wnjoy it now
