  • 2017 base Oct 2021 deg with 2.5g/L dosage. Aged in 500L barrel. Drank in a Zalto burgundy as we didn't have time to open a few hours in advance as we liked.

    This pours a lot more developed than expected with a color of golden yellow. Big bubbles feel surprisingly fine on the palate. Powerful delivery of yellow, perhaps even a bit tropical fruits with a good acidic backbone+minerals. Almost wish this had more secondary notes.

    This is unexpectedly ready but can benefit from further aging on the bottle as I felt the sweetness on the finish a little too cloying. Still better than any of Savart's 2018 offerings and its approachability and power despite the supposedly troubling 2017 vintage from a plot revered for its ability to age at a glacial pace is a big advantage. Potential to be 93+.

  • A beautiful blend of fresh and sweet red delicious apples with tart and lively green granny smiths. Soft light cream gently delivers the apple concoction across your tongue, with ginger spice on the finish to really make it pop at the end.
