This bottle, though good, is well below my first tasting experience with it. Good crushed shells and citric minerality, but lacking any real zing or zest. Good with scallops and pesto sauce, but not much special about it.

This is just a beautiful basic Chablis. Super pure and crisp nose of lemon, minerals, crushed shells, fresh cut flowers, beeswax. Light to medium bodied and wonderfully polished and balanced with a long, clean finish. This is François Servin's small production label named for his father.

A very nice example of Chablis "tout court."
