This had been cellared for three or so years from purchase, so it was expressive with more yeasty warm bread notes than expected, in addition to flowers, lemons and yellow delicious apple. Focused citrus flavors buoyed by minerals and saline with very good persistence. Outstanding pairing with NYE caviar on blinis with creme fraiche. Excellent value at 35

Very enjoyable, rather fruit forward champagne. This was described to us as ``very dry" but had, in our opinion, some residual sweetness. No complaints though, this was a wonderful aperitif and paired very well with dessert as well.

Champagne Brunch (David's House - Washington, DC): Sabered and served from magnum. Intense wine with lots of citrus, minerals, a punch in the face acidity, but some nice creamy toasty notes. Quite complex.
