This shows everything you might want from a WA Cabernet. It’s a dark red with bricking, when you swirl it it looks distinctly browning but still dark. The nose and palate are constantly changing, showing mint, cassis, roasted bell pepper, clove, cedar - initially fruity it then turns vegetal, then to more mature dried fruits. Glossy, plenty of interest. I wish I had more of it, it’s by no means past it. The only negative is that occasionally the tannins hint towards greenness - far less so than when it was younger, but still there. Unnoticeable with food though.

Nearly 2 years since the last bottle and worth the wait. Showing some signs of age now with bricking around the rim while the palate has definitely mellowed to a delicious mouthful of smooth red fruit. The also a really nice slightly toasty / ash element on the finish now which I don't recall from a couple of years ago. Glad I've got one bottle left which I will leave for a few more years. The 2009 is still on sale in the UK and based on my experience with the 2007, I will be picking up a few bottles to tuck away in the cellar.

Last bottle. More savoury than I remember - tastes a bit leafy and green. Probably past its best but a decent drink nonetheless.
