Deeper gold than when tasted last in 2019. Benefits from giving it air and coming up to a cool room temperature (I opened it in a Canberra winter) for sulphites to blow off.
First night a touch sour on the nose and bony on the palate (it’s only 12%). In a happier place the next night, supporting the theory it needs air, decanting perhaps. Grilled nuts, honey hint, yellow peach and that bruised/brushed peach skin aroma and sensation. Yellow peach and citrus palate, the latter reflecting minerally acids. More saline cut now too, reminiscent of better Spanish and Portuguese whites.
All up, middling intensity and length, but the saline and beeswax hints make it moreish nonetheless.

Pale straw. Light hint of honey, fine stonefruit, white flowers. Very smooth, has definitely mellowed, flavours are very clean but soft. No oxidative characters or obvious development. Chablis like talc and citrus. Extremely well preserved but has been losing intensity for a little while.

This is in a sweet spot, with a bit more flesh thanks to bottle age. Attractive toasty nose with grilled yellow peach and lemon drop. The elegant palate repeats those characters, lemon and grapefruit combining with an almost saline/Chablisesque touch. Still bright with sherbet acidity. Tumbarumba Chardonnay’s acid structure comes closest to Chablis of any Aussie region. Fully mature but should drink well for a few more years, the only question is whether the classy oak might have the edge over the fruit longer term. Superb demonstration of Tumbarumba Chardonnay’s potential.
