Just starting to open up after a 1 hour decant. At 90 minutes, as the previously stiff tannins finally began to soften, this Cab Franc came into its own. Served at about 57 F. Deep ruby-to-garnet color, no bricking. Lovely pipe tobacco, smoke, green bell pepper and a bit of earthy funk on the nose. Intense pure fruit (plum, blueberry) and cedar notes on the palate. Well-integrated alcohol. Pleasant acidity. Drying, lingering finish. Still has a few years ahead, and I will try to wait before I pop my last bottle of this vintage.
