Tart, dry. Lemon, green apple, and plenty of acid on the palate. Medium plus body. Nice finish. Paired well with seared rare tuna, cannellini beans, and bitter greens. I would buy again.

Pale straw color. Yeasty nose of freshly-baked bread, with hot butter, some green grass, Meyer Lemon, and seashell aromas. This is a bit smooth on the front of the palate, but crescendoes with a wave of gentle citrus fruit flavors at midpalate before fading with a gently acidic minerality. Altogether more Chablisienne than the other Servin wines I have tried, this is a serviceable expression of the appeals of this appellation at $20/bottle.

Chablis with E&M (E & M's in the rocks, Sydney): Muted honey, slight herbaceous notes, lemon, gentle sweet spice Juicy but savoury on the palate as well as a touch of wild ferment. Kind of funky and long. Interesting.

Golden straw color...darker than many Chablis. Aromas of green apple, lime, salinity, and a touch of stale beer. Palate has medium acidity, medium alcohol, and medium finish. Palate feels somewhat simplistic and nose lacks the defining oyster sheet characteristic of a Chablis, although it's almost there.
