Private Chef Dinner at Yann's New Place (Flatiron, NYC): Ruby. Pure cherry and roses nose, reserved but very pretty; perhaps a touch of heat -- from the nose, this wine needs time. The palate has good sweetness of fruit, maturing cherry. The wine is stern, but the sweetness is very appealing. Chewy and tannic with excellent framing acidity. Good length. To me, this isn't ready and needs a minimum of 3-5 years yet. An excellent wine.

Delicious, still very young. Opened up after an hour of so in the glass. Crunchy red fruits, earth and a truffley element. This still has 10+ years ahead of it.

Two bottles, one slightly tougher and more vegetal than the other. Both very nice. Fully mature. Some bricking but a healthy colour. Earthy, mushroomy and pinot vegetal aromas. Lovely red fruit on the palate with more of the earthy notes I had on the nose. Still a little bit of a tannic kick. Excellent.

Perhaps under-decanted this time, still very nice but higher acidity than I remembered, and did not really open up much. Too young on this showing.
