  First time to drink a bottle contemplatively.....the first of a case bought directly from Nicolas. Fabulous verve and energy of mousse and bubbles, even though drank in a white wine glass. Very Blanc de Blancs signature on the nose but fresher and younger than previous bottles drank in restaurants....maybe a more recent cuvee. Lovely Chardonnay character on the palate...taut, lots of tension but carries its 5g minimal dosage very well without crossing the line into austerity. I suspect that a year of cellaring will do wonders. Meanwhile, I would drink this either with food or as an aperitif. Great stuff!

  Large wine glass serving to accompany an appetiser of fresh warmed scallop carpaccio. No detailed notes but better even than when I enjoyed it two weeks ago at the same restaurant. This time it revealed itself as more white Burgundy and less as 'straightforward Champagne'....really enjoyable. 90+.

  Large wine glass serving. Lemon-gold colour with a very powerful mousse and good persistent bead of sophisticated small bubbles. Typical pure youthful Chardonnay nose - fresh, lemony, lots of minerals. Palate is quite petillante mouthfeel, very mineral with a flinty character. Good finish. Quite reverberant. Hard to fault as an aperitif and then it blossomed with the sublime Uni and caviar appetiser.

  A very nice Blanc de Blancs made by an old friend from Hong Kong. Nice to sip in Upper Modern Bistro, Hong Kong!

  Large wine glass serving for my birthday dinner at ON Kitchen & Bar....it is the somellier's personal bottling. Lemony gold colour with a powerful mousse and good persistent bead. Lifted, Chardonnay nose, quite minerally. Palate is quite petillante mouthfeel, very mineral with a flinty character. Good finish. Quite reverberant. Enjoyable.
