Wattle Creek tasting room (San Francisco): 2016 disgorgement. Bacon and bacon fat on the nose. Nothing on the nose speaks of a sparkling wine. Admittedly, I expected (and perhaps wanted) to hate this, but with an open mind, admit it is very nice, and quite unique.

Dry sparkling Shiraz from an Australian winemaker transplanted to California. Drier but also somewhat more fruit-forward than Chook. Accompanied New Year's Day Black Eyed Peas and Kale, cornbread.

I didn't know what to expect but this was really tasty. I served it with duck as a Valentine's Day dinner for my fiancé. I served it chilled but let it sit out for 15 min before serving. It was wonderful to sample as it warmed up. I will definitely get some more - maybe for a summertime dinner.

This is a unique wine. Red sparkling wines may not be for everyone, but I love them. The contrast of a rich, red wine with the effervescence and chill is really appealing. Quite dry, full bodied. Strong blackberry flavors. Luxurious mouth feel. Some tannins, but the coldness makes them come across muted. May not be everyone's cup of tea, but if you like sparkling red, very good wine.
