  • When 2 hours of oxygen is not enough.

    This big, dirty messy bottle of Barbaresco stood for 2 hours before consumption but was its best maybe 4 hours post-opening. It came with a pleasant red, browning slightly on the edge and a good nose of cherry and florals. The palate was more of a struggle. The tannins were long and seemed to be winning the battle against the fruit. It was at its best halfway through a fine roasted shoulder pork, when the fats, salts and protein embraced it most vigorously. This peak saw it on an ethereal air of strawberry, cherry, licorice and tar. The downhill descent was more laden with tannin, and I lost my way. Within Italy, I think I will steer back to the Avignonesi clan.
