  • Wine Tasting Group (12/10/2017): From Valdespino with grapes from Macharnudo Alto vineyard. Extracted in Dec. 2009. Intensely nutty, salty, mineral, spices and dry apple aromas. Palate has a deep feel with creamy texture that mirrors the nose with beautiful acids. Really good but the palate is somehow a bit dilute as if it's missing something. Nevertheless, it's still a delicious drink.

  • Absolutely beautiful, in a perfect place. The nose is alluring immediately upon opening but actually needed a half hour or so to fully blossom. Such great energy, with detailed fresh flour and wheat, creamy citrus scents of flor. The nose is intense and focused, and with 8 years in the bottle has taken on great complexity - this is one to sit with. The wine feels light, almost, on the palate, but there is great focus and intensity here too, and the wine shows lemony, briny, doughy, flowery rye whisky complexity. This was a great bottle, and a reminder to me to hold more of these for some years.

  • Deep, nutty, a bit medicinal. Lots of Flor. Very complex. Palate shows tons of Flor. Huge salty some lemon. Lighter than nose. Tart salty finish. Nose - 5/6, Palate - 5/6, Finish - 5/6, Je ne Sais Quoi - 1-1.5/2 = 16-16.5/20.

  • Bottled 12/09. You're not really supposed to age sherry under cork, especially Fino, but a friend discovered this in the back of the cellar and we opened it to see how it had held up. Well, you're not really supposed to age sherry under cork, especially Fino. The nose is still very nice, with a lot of nutty caramel and brine, but the back half of the wine is missing.

  • This is my last bottle, and was, along with #15, my first purchase from this project. I love a fino with a plate of green olives on a hot, stifling summer day, and for that you want a fresh fino. That's not this bottle. This bottle, while not as refreshing, has developed tremendous aromatics and complexity. It's got more body and it's also quite sensitive to serving temperature (I found the guidelines on the website useful). Terrific with food -- would love to have it with nigiri. I'm happy to enjoy fino with some bottle age.
