A Not-Good-For-Wine day on the Bio calendar. Poured dark lemon from the bottle. Nose of bruised apple (definite oxidation), citrus and pineapple. Palate of citrus fruit, pineapple and mineral. Excellent texture on the palate - all I would hope for from a 1er cru Chablis but sadly, the oxidation has taken over and it’s over the hill. Now an intellectual wine but not a desirable one. Finish is all canned pineapple and very simple.
This time a fresher bottle then 3 months ago (from same batch). This one is spot on with proper disposition given its age.c and continues to evolve with air. tasted over two nights and better on day two as the wine got Fresher and more focused. Lemon drops accompanied by nice briny back end notes are the dominant flavors with some exotic tropical yellow fruits as secondary with a whiff of almond. While at it's youth this struck me as modern style but with age the wine evolved in a very classic Chablis style -i was very happy with this bottle.

Nice bottle with some tropical notes to the fruit and good full mouth. Some oxidative hints that didn't detract but this one as well is advancing at a rapid speed compare to bottles from the older days. Time to drink if you have em.

La Confrerie des Chevaliers du Tastevin (Vancouver) (Zest): This was much fresher than the 05 Vaillons served alongside it. More citrus and freshness with surprisingly good acidity considering the vintage. Quite good.
