Wait ten years. Decanted 4.5 hours before pouring. Extremely tannic, good acid, very little discernible fruit. This worked (mostly) as a counterweight to very rich A5 Wagyu, but way too young to drink by itself. Unclear to me how good this might end up, but it won’t be for a long time, if at all. (I knew this would be the case, so it’s on me for opening.)

Visit to Chandon de Briailles-2015 Wines (Savigny-lès-Beaune, France): Ruby. Complex aromas already. Earthy cherry fruit. Clearly less ripe than others that preceded it. Excellent acidity, properly austere, dry finish. Serious wine with a lean line that belies the nature of the vintage.
