stunning. Bubble still present but faded quickly. nuts, caramel, salt, my grandmother's molasses (faintly recognizeable). This beauty was a real treat to enjoy with friends. It did fade fairly quickly in the glass, 30 minutes, but what a gem.

Pushing the envelope but an amazing aged Salon. Often oxidation is the fear but in this case it gave character to the wine with great expression of cream, lemon curd, brioche and just enough effervescence remaining to make it fun. Excellent and great wine for my 70th Bday at the Inn in Little Washington.

A touch advanced but still has a bit of effervescence and cream throughout. Cinnamon spice, bruised yellow and red apple, caramel. Dense and rich flavors. Some lemon merengue citrus and acid hanging on. Very good and delicious to be sure, but more mature and advanced than my last examples.

(Salon) This wine was very good but I do think it was flawed by slight heat damage as there was a sherry component to the nose and a hint on the palate. Despite that sherry component the wine was really delivering on all cylinders. With great elegance and lightness this coasted along your palate with great concentration and length. There was also a great minerality on the nose and palate. It seemed light but definetly had a sense of power. A great effort but the bottle I had at Town four years ago was better and definetly not heat damaged.
(Salon Champagne Blanc de Blancs Brut) Marzipan and brioche nose; honeyed, rich, tangy palate with good acidity; long finish

A bit aged for this vintage but still in great shape. Dried fruits, tobacco, coffee. Fine bubbles. 96-97
