very pale yellow colour with sizeable bubbles. fairly faint floral and fruity nose with some whiffs of butter. ample fruit flavour held in tension by firm acidity that carries into the finish.
residual sugar seems to be on the low side of the extra dry spectrum (12-17 gpl)… so marginally ok match to spicy pad thai.

121 BC Saturday tasting (121 BC, Sydney): Aromas of peach and slight candied notes. More of the same on the palate with slightly course mousse and a little tannic burr on the mid palate. Meh

Ai Fiori (New York): Intense nose with floral notes, light citrus, lemon and apple. Bright mouthfeel with good acid toward the finish leaving it crisp. Good fruit sweetness as well.

Pale straw sparkling.
Reductive nose, neutral otherwise - slight esters.
On the palate, 13-15g RS, light body, 11.5% alcohol, medium mousse - coarse bubbles, medium plus acid.
Tank-method prosecco. (Or really sweet Cava with 9m on lees?).
Actually: Drusian DOCG valdobbiadene Prosecco Extra-Dry (12-17g) 11%
