Caroline's birthday at Sushi Yuki: Went straight to Prevost for this since the tropical, exotic notes reminded me of the 2019 Prevost that we had a couple of months ago. Guessed 2012 Prevost based on the development and warm fruit profile, a pretty good guess if I may say so myself. Think others liked this a lot but personally it was a little too round and tropical without the excitement of the 2018 LMB that I tried last year. Fans of richer champagnes will like this.

Consumed over two hours. This needed air. Clearly there is structure, but this is very young and tough to assess. Light nose. Faint rich flavors and nuts after two hours, but this is muted. I wouldn’t drink this now for enjoyment. I do think there is some upside. 92-95.
