In Paris at private dinner. From the Queen of Ambonnay who sadly has now retired. Very vibrant red apple / pinot noir markers with the noticeable oxidative notes only emerging later after extended aeration. Lots of midpalate presence that seems to fill every corner of the mouth in a very matt package. A monolith in the mouth! Very sapid on the finish. This shows great freshness and is just hitting its stride.

Nose: The nose was showing its age as this bottle was clearly at a mature stage with tones of crisco, marmalade, red apples, creams, custard, pears, honeycomb, red flowers, biscuits, pastry notes, and warm dough. There is a lot of complexity to the nose, but it just seems to be lacking something that I can’t put my finger on.
Taste: The feel is Medium bodied with crisp and well-integrated, high acidity. The feel is well textured and balanced with marmalade, red apples, creams, pears, honeycomb, biscuits, pastry notes, and warm dough.
Overall: This is fully mature and this bottle may have been right on the other side and on its slow way down. It’s still a gorgeous and classy champagne with a lot of Lees-driven notes that are backed up by mature citrus tones.

Very deep and rich, lots of patina, earthy elements, bruised apples, quince, stone fruit. Mature, drink up.
