A very good bottle. Lovely nose with crushed strawberry, garrigue and leather. Earthy palate, not heat, wonderful balance. Can age a little more with no pblm.

The 2007 Château Simone is showing beautifully, blossoming in the decanter and glass to exhibit aromas of red berry fruit, balsam wood, plums, spices, orange rind and coniferous forest. Medium to full-bodied, deep and savory, with powdery structuring tannins and bright girdling acids, this is a serious wine that merits its unique appellation.

bought on release, perfect cork, 40 minute decant robe - showing a little bit is age but not alarmin, this wine was showing beautiful reflections in the glass of a darker core with red cherry juice along the rim. nose right from the gate, this was not shy at all with nice ripe black cherries , leather wet leaves and spice to make it all nice. from the start and served blind, there were comments from burgundy to rioja. palate - for an o7 which tends to be a warm vintage to the standards in provence , it showed very good ballance with mature darker fruits , integrated tannins , enough acidity to keep it fresh and wonderful length. this was surely a winner around the table do not feel guilty about opening this now for it is really delicious. i have one more bottle and i will open over the next few years when the moment is right. i cannot wait to see what a vintage as in 2010 brings for this wine where it has a bit more structural support and even more balance . this is a very very wonderful wine
