  Mi segunda botella de este excelente vino, la anterior la abrí en el año 2012 es decir hace casi 10 años. Comparando la nota de cata de aquel momento, no existe una variación significativa. El color es negro y denso. El aroma es fantásticamente complejo, fruta pasa, orejones, dátiles, café, caramelo, café con leche etc. etcétera. La boca es muy compleja y la acidez se equilibra perfectamente con el dulzor.
  Quizá la mayor virtud de este vino es que, a diferencia de otros PX, resulta mucho más ligero en boca, lo cual lo hace más bebible y disfrutable, esta ligereza, no obsta para nada a su contundencia sensorial.
  Si he tardado casi 10 años en abrir una segunda botella y no he constatado cambios significativos, ello quiere decir que este vino tiene muchísima vida por delante, quizá otros 10

  ChrIstmas WIMPS, Pandemonium table (La Trompette, London): Fourth bottle of this, and unsurprisingly consistent over six years. Relatively light and lithe for a PX. Long and complex. Very drinkable. Lots of nuance without clot or clog. ****1/2

  Negro azabache de aspecto denso. Tinta la copa y cae con peso en la copa. La nariz es intensa, hay tinta china, posos de café, caramelo, pan tostado, nueces caramelizadas.... En boca es impactante, untuoso, con notables amargos, dulzor intenso, notable frescura. Largo, con profundidad y notable estructura. El vino procede, tal y como comentan en la contra de una solera de siete bota de Gracia Hermanos en manos de la familia Pérez Barquero. Fuera del re´gimen regular de sacar el vino procede de una bota "NO". Mis conocimientos no alcanzan a tanto pero afirman que este es un PX de marcado carácter montillano y que probablemente fue "tocado" con algo de oloroso viejo. Excepcional.

  Epic Champagne dinner (Taberna, Bukit Merah): A lovely (and very sweet) way to end the dinner. What a nose this had, with whiffs of smoke, herbs and bramble curling around a core of sticky date pudding and dired fig aromas - really intriguing. The palate was super sweet, rich and thick, but somehow still managed to come across with a lovely soaring balance to its molten flavours of dried raisins, treacle and molasses, all this infused with a lovely warm spiciness as the wine moved into a long, rich finish.

  The usual Christmas pudding nose, rich, raisiny and unctuous. At 15%, a little lighter than PX can be, with a freshness and acidity that balances the huge sweetness. This has benefited from being opened to breath a few weeks earlier. As good as ever and just a wonderful experience. ****1/2
