Timuquana BYO (TCC): From a magnum. This surprised me at how lovely it was. Drinking quite nicely. It started excellent and then had a moment where it was a touch more musty and then it seemed to soften well into a bit of age and freshness and good acid and overall very easy and well drinking.

1995 Vintage Champagne horizontal (Medlar (London)): One of the few glasses that went pretty fully in the spittoon. This served non-blind as one of the aperitifs to kick things off was not a great example. Bitter on the nose, quite unpleasant. Oxidised within a few minutes in the glass.

From MG and brought to Falsled Kro. What a pleasure with fine mousse and long aftertaste. Quite good acidity. Initially some oxidation in the nose but blew away after half an hour. Citrus and green apples dominating.

It’s difficult to imagine a more sophisticated Champagne. Smooth, rich, and fantastic on the nose. Tastes of dried fruit, beautiful amber colour.
