Souper chez le Baron (Joliette): Une couleur de vieux blanc d'au moins 10 ans! Le nez évoque un vin de la Côte de Beaunes d'un certain âge, mielleux, discret. La bouche montre une très belle richesse, alors que paradoxalement le vin reste bien sec. Il montre une très belle expression aromatique, c'est complexe et salin, avec une acidité basse. Aussi savoureux qu'intriguant, c'est sans doute le meilleur vin blanc du Languedoc que j'ai pris. Magnifique! 93-94 pts

Golden mature colour. Generous nutty, complex bouquet. Intense balanced palate, fruit, spicy finish. Drink now. Very burgundy-like, but less elegant in the mouth.

BYOB Diner @ Restaurant De Eendracht (Rotterdam, Netherlands): I’m not known for my love of Southern French whites, but this was quite good and very interesting to taste in the context of the Chave, since they both contain a high percentage of Roussanne. This too had quite a honeyed nose and more punch, but was less refined. Well balanced at 13,5% alcohol, this had pleasing medium-plus acidity and a nice spicy tang to its extracted mid-palate flavours of honeyed quince and sweet sherbets.
