Unfortunately much less complex than PYCM Chassagne Montrachet 1er Cru Les Chenevottes 2010 (which was tasted from a 375 mL in March 2020). Although the bottle tonight of Les Baudines was a bit too chilled, the wine evolved ever too slowly even throughout 3 hours of dinner in the glass. A decant would have helped. This bottle had a lot of tartrate crystals which fortunately settled to the bottom after leaving the bottle upright for 24+ hours (thanks to forum members for their kind advice). The color was a bit on the pale side, and this was a great indication of the bottle being very well stored (and very thankful for that). Still had quite bright acidity with good tartness, and very very subtle toasted vanilla notes that only came slowly towards the front but took essentially a few steps forward and stayed there. This is nonetheless an enjoyable PYCM, but had limited pairing capability during the first half of a Michelin star dinner, even with courses that had some creamer textures.

Drank at the Greens at CCC. Floral aromas on the nose. Medium body, a bit fleshy. Solid acidic core, some citrus and white fruit. Also some green apples. Enjoyed the complexity of this wine, along with its lovely long finish.

Light slate straw. Nose light vanilla, some toast. Palate lemony, bright acidity balancing light vanillin and moderate richness. Some minerals, great depth.
Overall a wonderful wine in a great spot for drinking now. 93 pts

In a good spot right now for me. Nice acidity, just a good amount, so that majority of people generally would enjoy this as well at this stage.
Consumed in a busy restaurant environment so didn't really give it enough attention though.

Some More Wine with Meals in Burgundy and Northern Rhone; 4/9/2019-4/17/2019 (France): Floral with tropical fruit and poached pear. Good weight and still showing a bit of baby fat, along with an exotic sweetness that seemed atypical for Chassagne, but was certainly still enjoyable.
