  • Pale ruby coloured wine with notes of autumn leafs, and all the smell of an old wine on the nose. The first sip of the wine has the taste of sweetness on the palate, with un-noticeable soft tannins, and the almost absence of fruitiness, but balancing the reductive notes to the softness of the tannins, as if the wine wants to tell me: 'sorry, but this is all I got left after patiently lying in your cellar for 15 years, but if you concentrate, try to enjoy my last efforts of serving you the rest of what I got' So I make a brisket stew with my SousVide, tendering the meat for 24 h, and hopefully give the old bottle some respect.
