The second 27-year-old of the 9 champagnes tasted tonight, but this was the wine of the night. The age shows in the amber gold color. No pressure left behind the cork, however, some perlage persists on the initial pour, and also fine bubbles coating the glass. Toasty caramel, spicy oils, and green apple on the nose. The palate is enveloped by a broad, embracing attack of both flavor and energetic acidity. Stunning and beautiful. Long finish.

Bottle number 2858, disgorged January 2009. Pale amber color. Bubbles almost gone. Intense aromas of bruised apples, grapefruit, toast, butter, cheese, caramel, honey. High acidity. Taste of apples, lemon, yellow plum, dried apricots, honey. So full of energy! Very long.

Started drinking straight after opening. More golden than the BdB. Butter and nuts on the nose, but still quite floral. Gooseberries and minerals. A lot of character, and the mouse is bold but elegant. Incredible long on the palette. More bitter notes after 5 hours, almost close to collapsing a bit. 97 points

Nice and golden yellow colour. Complex nose, brioche, candied fruit and pineapple/tropical fruit. Still Nice bubbles. Very good length. Probably at its peak. Great bottle

A Burgundy Night: Blind. Wonderful nose, mature and complex -- in a good place now, fine maturity to the fruit as well -- balancing acidity. Complex. Ha! Finally a good bottle!
