The medium-dry entry-level cider between the sweet ("Tendre") and the dry ("Brut"). Lot 1603, 5,5% alcohol.
Medium-deep amber to luminous orange color. Quite intense, sweet-toned and somewhat developed nose with aromas of bruised apple, some sultana raisins, a little bit of baked apple with sweet baking spices, light caramel tones, a hint of acacia apple and a touch of apple jam. The cider feels dry-ish to off-dry, balanced and gently bitter on the palate with nuanced flavors of caramel, sultana raisins, some earthy spice, a little bit of baked apple, light honeyed tones, a hint of apple jam and a touch of apple peel bitterness that keeps the sweeter tones nicely at bay. Very soft and silky smooth mousse. Moderately high acidity with a slightest touch of tannic grip. The finish is off-dry to slightly sweet with long, complex flavors of caramel, sultana raisins, some apple peel bitterness, a little bit of beeswax, light notes of toffee, a hint of baked apple and a touch of leathery funk. The aftertaste seems to be quite alive, tasting different after every sip.
A very lovely effort with a terrific balance between the fruit, the subtle sweetness, the slightest touch of balancing bitterness and the nice acidity. Feels more like an easy-drinking everyday cider compared to the more serious and gastronomic Granit, but that doesn't mean this cider wouldn't pair well with deftly paired dishes. Furthermore, the cider shows good potential for development; it had been aging in my cellar for a few years now and it feels like it could've been left to age for many more years. Not the most affordable cider at 16,50€, but terrific stuff all the same.
