The first few of these Tasmanian sparklers were built to age, with no malolactic fermentation and care in preserving their naturally high acidities. This is fresh, bright and utterly delicious. Notes of lemon, minerals, cracked wheat and a little white mushroom. Linear and tight in the mouth with pinhead sized bubbles and a nice creamy mousse. Super dry and precise finish.
