Chimay blue is one of my favorites and 8 months of upright aging really has changed the character of this to a more mellow, less yeasty ale. More experimentation ahead...

Drank in a vertical tasting with a 2008 and 2006. This beer is crisp, fresh but heavy full thick mouth feel. The typical chocolates were there along with hoppy flavors and some fruit. Muted nose and dark color.
