Nose: Dried prunes/a quasi Porto like nose. The nose is an a tractor. Taste: Fruits Vine through wonderfully, an acidic mid taste, and mix if the two linger in the mid/back tongue for a while (nice length). It has both depth and is refreshing at the same time. Something I personalky love in wines.
This is certainly ad wine to drink with foid (e.g. fish soup or tartare as I tasted tonight).

Wine Dojo blinds (SF Wine School, South San Francisco): (blind) Medium concentration yellow color. Diminished aromas showing mostly vanilla, clove (oak). Dry, medium minus body, 12.5% alcohol, high acid. This is acid-driven and lean, with low fruit concentration. The oak is out of balance, showing lots of clove (50% new oak?)
Laterals - White burgundy - too much oak - Sonoma Chardonnay - too acidic and low in alcohol - Margaret River Chardonnay - too much oak, too little fruit ripeness, too much acid - NZ Chardonnay - too much oak, not reductive. - White Rioja - not overtly oxidative enough.
Final Call: Village-level Cote d'Or Chardonnay 2016
Upon re-smelling, I still can't find the key lime pie / oaked pyrazines. Need to taste more Bdx Blanc.

At this stage of development, the acidity is less, the richness is more. Needed to be in the glass for 30-45 minutes before the wine opened and shined with the grilled shrimp with asparagus and snap peas.

Some ripe stone fruit and mango along with crisp apple and cream. Really penetrating, incisive fragrance and attack. Nicely balanced. I found this in my hotel minibar (the chairman of the hotel group owns the vineyard) and wasn't expecting much. Though a wine buff, I know nothing about white Bordeaux. Clearly, I need to rectify this. Delicious wine.
