Deep pink in the glass with nose of red fruit. On the palate, raspberry and strawberry predominate with an almost steely or flinty back bone. Brut but not sweet. Bubbles ran out fairly quickly when letting the glass sit for a bit. Overall nicely put together.

Champagne: piccola nota selvatica, carne, ferro, balsamico, naso tesissimo, poi il frutto, rosa, spezie da pinot nero ed erbe aromatiche. Bellissimo il leggero tannino, tornano i frutti di bosco e poi la ruggine. Il più equilibrato ed elegante fino ad ora.

Dinner at Woodfire Grill (Buckhead, GA): Dark pinkish red, obviously saignée; nose is rich and meaty with ripe strawberry, cherry, and almost red currant; palate comes together nicely on the finish which keeps this from being clumsy; a nice pairing with the wagyu tartar.
