Pop and pour. Started out a bit rough. Bitter on the finish. After about an hour smoothed out. Hints of vanilla and coffee. Went well with filet mignon.

Tasted from 3 Liter. This had a great nose with aromas of dark fruits and some menthol and roasted meat notes. The palate was very smooth and had some nice peppery spice accents. What a fun bottle this was to drink!

A very nice bottle of wine that began to shine after 3hours of being open and was better on day 2 than it was upon opening. I think this wine has plenty of life left. Would have scored higher if not for the EtOH being a bit unbalanced.
Inky purple with a nice mix of dark blue fruits (blackberry, blueberry), pepper and smoked meat aromas. At first the EtOH was astringent on the nose, but it became better integrated with time. Full bodied with more lush blueberry with a hint of tartness you get with unripe fruit. Transition into a the finish a bit disjointed but licorice, game and toasted notes dominate. Finish ~30 seconds with somewhat sweat not overpowering tannins.
On day 2, I was able to pick up some floral notes and overall it was better integrated with the EtOH not being so obvious.

My first Pax syrah. Ready to drink. Interesting flavors. Went well with grilled porterhouses and sauteed mushrooms and grilled corn on the cob
