Thick, opulent, and honeyed texture with notes of lemon curd, almonds, hazlenuts, apples, flowers, and spring vegetables. Flint on the finish with peaches and honey. This is all very nice, but my problem with Gavi is that the flavors are so delicate and muted. This is a very subtle wine with subtle flavors. Food pairing seems important and I didn’t get it quite right. The faintest hint of spice is too overbearing and plain fish doesn’t draw out the flavors enough. On its own, it’s a little dull. The best match was with a simple garlic cream fettucine. In the future, I would try Gavi with Pasta with Oil and Garlic (serve it with steamed clams) and Bow ties with sugar snaps ricotta and lemon.
This had some bitterness and reduction that blew off after an hour and it drank very nicely at 8 years in. I would be interested, though, to try another bottle younger to see if the flavors are more pronounced. There is something attractive here if I can figure out the right food pairing and amount of bottle age. Best at about 53 or 54 degrees or so.

Modest yet intensive on the nose. Aromas of green apples, peach, lemon, grounded white pepper, limestone and beeswax. Young, fresh and vibrant.
Bone dry, medium+ acidity and light body. Rich on the palate with lots of lemon, green apples and peach. The finish is lingering and those white pepper and limestone aromas are coming through.
The wine seems somehow a bit tight and it doesn't show off all potential that is in the bottle. Decanting may help or preferably a year or two in the cellar.

Look: Unfiltered, yellow-green, light. Nose: Ripe yellow apple, minerals. Taste: Rock, apple, wide. Not fully dry and a little fiery finish.
