Time in the glass built the energy of this wine and after an hour it became full of vim. Slightly shy nose but lovely apple and spice on the palate. Very enjoyable right now but with years of development left in this wine.
This bottle was overall significantly better than my last. I did decant this for several hours which may have made a difference. The nose was more open with honey, wool, jasmine, pear, apricot, and just a hint of botrytis. The palate showed more richness and balance than I recall in the prior bottle. Overall it was very good.

A solid and enjoyable Vouvray, but I was hoping for more from Foreau on my first experience. The nose is lovely with honey, apricot, wax, floral notes, lanolin, and pear. The palate however seems a little disjointed to me and doesn't quite come together. Maybe the bottle, maybe an awkward phase? I'll wait a while before trying again.

For me the only clunker of the night. I wondered if it was off, but I saw the sommelier taste it himself - so assume this is just the nature of the wine. It was paired with roasted foie gras (delicious), but the wine just never showed the sweet and acid needed to match the dish - was just all very muddy and closed off.

Vindredi (Bellevue, WA): Not my favorite tonight; dry, with lots of acid and acetone. Slightly sweet.
