Another bottle that I let sit too long (I'm gradually weeding them out). Subdued fruit and almost a bit watery at the start, I imagine that there was a lot more to it a few years ago.

Slight vegetal nose. Followed with an almost grain element on the palate. Like a non sweet wort if you can visualize (tastualize?). Odd. Off bottle? Not appealing.

The final blend for this wine was chosen by friends and supporters of the winery under the guidance of the head winemaker. The group elected to go with a blend consisting of 85% Cabernet Sauvignon and 15% Merlot, with 40% of the grapes being dried prior to fermentation. The Cab and Merlot were fermented and aged separately for between 17 and 19 months in French oak. This wine exhibits a concentrated nose of blueberry, blackberry and brandy-chocolate with nuances of cassis and cherries. The palate is dry with the impression of sweetness from the appassimento method, exhibiting classic flavours of plum, black olive, tobacco and graphite. A rich, creamy texture leads to soft tannins that are balanced by good acidity leading to an exquisite, complex finish.
