  • Another bottle that I let sit too long (I'm gradually weeding them out). Subdued fruit and almost a bit watery at the start, I imagine that there was a lot more to it a few years ago.

  • Slight vegetal nose. Followed with an almost grain element on the palate. Like a non sweet wort if you can visualize (tastualize?). Odd. Off bottle? Not appealing.

  • The final blend for this wine was chosen by friends and supporters of the winery under the guidance of the head winemaker. The group elected to go with a blend consisting of 85% Cabernet Sauvignon and 15% Merlot, with 40% of the grapes being dried prior to fermentation. The Cab and Merlot were fermented and aged separately for between 17 and 19 months in French oak. This wine exhibits a concentrated nose of blueberry, blackberry and brandy-chocolate with nuances of cassis and cherries. The palate is dry with the impression of sweetness from the appassimento method, exhibiting classic flavours of plum, black olive, tobacco and graphite. A rich, creamy texture leads to soft tannins that are balanced by good acidity leading to an exquisite, complex finish.
