  Similar to my Nov 2015 note. Hasn't really changed or evolved since then. Still needs about 30 min of air to show. Still fresh, bright, lemon, acid. Lovely texture too. A lovely pure Chablis from De Moor with room to develop and deepen still.

  Lovely, bright. Terrific citrus punch and salivating. Classic iodine notes. Adds some weight with air but drinking very well know. None of the over ripe apple quality that some of their wines can have.

  Diese etwas vernachlässigte Nachbarschaft des Chabils hab ich eben zum Mittagessen auf den Tisch gestellt. Der Chitry 2011 von de Moor hat viel Wiederbelebungspotential nach einer langen (nicht durchzechten) Nacht. Sehr geradlinig, ziemlich hart, stramme Säure und reichlich bissig-lebendige Aromen von gelben Zitronen und nicht ganz reifen gelb-roten Äpfeln (vielleicht Topaz). Holz oder weiche Charakterzüge sind kaum zu vernehmen. Noch blutjung und für einen 2011er durchaus sehr charaktervoll. Ich bin wohl mal wieder Opfer meiner voreiligen Neugier geworden. Gefallen tut er mir trotzdem … nach gut fünf Stunden in der geöffneten Flasche, beim Abendessen, trat sein momentanes randvolles Potential zu Tage. Nun wirkten die Apfelaromen noch etwas präsenter, aber nicht mehr zu stramm säurebetont. Wured über den Abend immer trinkiger und schwups war er leer ....
