Much more lively and vigorous (acidity, freshness) than a bottle opened last month. Upping to 93 from 91; midpalate was a good 30 seconds and the finish lasted over a minute. Has a few more years before the brown butter profile starts to dominate - but right now, it's just delicious and harmonious, overall.

This needs food (pairing with foie gras was perfect) to balance it's oxidized state. Very very fine bubbles that fades quickly. Deep gold-copper color with aromas of nuts, vin jaune, hoisin sauce and candied orange. Same profile on the palate with extra honey. Too much for me to drink without food but with foie gras or any fried food, great match.

I must admit candidly that it was our first time opening such an old bottle of champagne. At first, we were surprised to find an oxydized wine (like a "vin jaune"), but after a while, it developed aromas of walnut and moss. Very fine bubbles, deep yellow color. We really enjoyed it, even more with foie gras.

Oxidized. Brown butter. First time trying something like this, not totally our taste.

Clearly evident house style of oxidized, brown buttered, maltose and lemon peel. Still has some bubbles left.
