Je constate que c'est ma dernière bouteille d'un lot de 6 et que je n'ai écrit aucune note sur les bouteilles précédentes. Notes écrites plusieurs jours après dégustation. De mémoire, pas toute la typicité d'un chablis, i.e. peu de minéralité percue, floral, citron et merringue. Acidité au point d'équilibre. Un excellent rapport Q-P. Malheureusement plus disponnible en IP.

My bottle rocked!!! A little metallic on the nose which i do find with a few years age, but it blew off nicely and reveled pure clean and pithy classic Chard Fruit. Not much Salinity so don't expect that traditional Chablis note with this one. Let it breath and go to pound town. I would actually dump in a decanter and go at it. The '11 acidity really keeps the focus here, i had a 10 last year and it was pretty fat. Tropical toned fruit but not cloying at all. really delicious and complex and in a very good spot with air. If you bought this on release price its a steal.

In the Jekyll and Hyde of De Moor, this ended up on the more tropical, fruit side. There were distinctive notes of fresh pineapple, lychee and perhaps mango. With air, more salinity and acidity emerged, but it was on the whole a touch fat and fruity for my taste and usual preference in Chablis (and for the fish we served it with).
