    Pale lager-like yellow color with a small white head that quickly recedes to the glass' rims. Very wild and pungent nose with tart citrus fruits, ammonia and hay. Bone-dry, bracingly sour and sharp on the palate with flavors of grapefruits, including the white pithy parts, leather, wild and funky notes of brett, some ammonia, a little herbal bitterness and hints of earth. Although the hop bitterness is only moderate, it is surprisingly noticeable for a Lambic. The carbonation is quite mdoest. The finish is really crisp and remarkably bitter - a lot more than the midpalate. Sharp and sour flavors of vegetal herbs, lemony citrus fruits, some leather and hints of earth.

    This was a surprisingly bitter example of classic Gueuze - normally these beers have no noticeable hop character. Here the pronounced sourness and quite noticeable bitterness clashed a little bit, but the beer was still really enjoyable, all thanks to its extreme complexity, true to the style. I normally like my IPAs with hops and lambics withou, so this wasn't my favorite bottling of Cantillon. Still, this is among the greatest beers in the world and a lot better than some classic Geuze / Gueuze beers out there. Recommended - although felt a bit expensive at 11,90€ for a 375 ml bottle in a bar.
