Vinetasters: 2019 Châteauneuf-du-Pape (Skokie, IL): Probably the best wine that Chapoutier makes (which of course is not really saying anything). Distinct oxidative notes on the nose (dried shiitake mushroom) give this a very savoury quality. Moderately sweet on the palate with some tannins remaining and a slightly oily texture. Interesting, but not a wine that commands much more than a taste before moving on.

Rich dark ruby with beautiful transparency. Rich, sweet dark nose, ripe fruit, smoke and dried dates. Complex leafy nose with dried roses. Gentle sweetness with well structured acidity, tall tannin structure. Transparent, with ashy cocoa bitters. Perfect pairing with 68% dark choc with toasted coconut, revealing juicy vibrant cherry and kirschwasser. With time, mint tea and herb-leaf pastilles. Excellent!
