Went well with baked Faroe salmon. Dark garnet, opaque, no brown edges. Pronounced, complex, elegant aroma consistent with its St. Emilion blend, sweet black cherry aromas with slight herbal notes. Soft, round, balanced fruit, also a sweet black cherry taste, slight bitterness on the finish. It's fully mature, excellent but not as outstanding as many other Cayuse wines. I'll drink my remaining two bottles over the next year, won't pair it with very heavy foods. Ric

This was better than the two prior bottles (at least on the first night). Full of sweet fruit, nice complexity and excellent balance - this seemed to be in a prime drinking window. Nice depth of flavour, sweet without any of the green notes of the prior bottles, a little tobacco on the finish, but would be hard pressed to call this out as a cab franc - seems more like a cab/merlot/syrah blend such is the balance. Excellent.

First aroma and taste a bit odd and chemical. After 2 hrs open went back to it. Much more pleasant and true varietal character. Soft mouth feel. Plum, pepper, dill, oak toast. Undecided on aging. A little fresher merlot fruit would be a positive, but still think will improve with age. Overall: neutral.

First night, exact same as prior note. Restrained, ripe but not showing much complexity. Decent finsh.
Second night - pretty much the same, filled out a little on the palate but also developed a green bitter edge on the finish. Rating same at 90.
