Clearly I don’t read my own notes (and who should, really). The Mas Jullien 2011 Terrasses du Larzac is more generous than my previous bottle. Raspberry, maquis/garrigue/Mediterranean bosky stank, and violet—oh, the violets—on the nose. Some meat and turned loam/schistous notes as well. The palate is a bit more generous, if not resolved. Black and red fruits, herbs and earth, and power chords. This is working its way to the big time, but needs the right stage. Very good with dry-aged but lean pastured beef with Marcella beans. And absent aged Sangiovese, this more than performed. Like this a bunch, but wish I had quite a few more than I’ve cellared. Re-buy in a heartbeat. Excellent red for the patient.

Still benefits from a long decant, but now things are coming into relief. Black fruit, slatey soil notes, some Mediterranean scrub, and game notes on nose. More black fruit and hints of iodine with a robust earthy core. Tannins are resolving and acidity is mostly knit. Lots of charm, though there’s plenty in reserve. I really like this even if it’s glacial in its development. Hold unless you have a bunch.

Pop and pour. A last minute scramble for a cheese wine. Tighter and more black-fruited and lean than last bottle. Clearly, I had option anxiety at the wine fridge. Good, but not quite up to the last bottle(s). If you got—no hurry. If you got plenty, decant at this stage. Honestly, I’d hold.

With a quick decant off sediment and for a little bit of air, this is ready for prime time. Black-fruited, with good freshness and a savory mineral and herbal kick on the finish. Still has some ripe, sweet tannin to resolve, but there’s no harm in opening a bottle now, though no hurry to drink up certainly. I love Mas Jullien, though a cursory glance of my cellar list shows I invest far more deeply in the whites. This suggests that balancing purchases isn’t a terrible idea.
